FOUNDER EXPERIENCE · EDUCATIONAL CASE STUDY
First-hand experience of building, operating and closing a hospitality business—now informing practical teaching, commercial analysis and business improvement.
THE BUSINESS BEHIND THE CASE
Taste of Belgium was a customer-facing chocolate, dessert and coffee business operating first in Newry and later at CastleCourt in Belfast.
Its day-to-day reality involved product positioning, supplier coordination, staffing, customer service, cost control, marketing and cash-flow decisions. Some initiatives gained traction; others brought uncertainty and difficult trade-offs.
Rather than presenting the venture as an uncomplicated success story, SMITH uses the experience to examine what managers can learn when commercial expectations meet operational reality.
Historical business case. Taste of Belgium ceased trading in July 2026 and is not accepting orders.
A SHORT BUSINESS HISTORY
The business began with a café in Newry, offering an early opportunity to learn about customers, products and day-to-day hospitality operations.
The business relocated to a CastleCourt retail unit in central Belfast, bringing new footfall opportunities and a different operating environment.
The trading period brought ongoing decisions around product ranges, purchasing, marketing, staff and the relationship between customer demand and financial performance.
The Belfast business closed in July 2026. Its full commercial experience, including difficult outcomes, forms part of the case's critical learning value.
The Newry-to-Belfast move and July 2026 closure were also documented in the News Letter's July 2026 coverage .
CASE-LED LEARNING
The case can support undergraduate, postgraduate and professional discussions without pretending that commercial decisions have simple answers.
How should an owner evaluate a new location, expected footfall, commercial rent and the risks of expanding or relocating?
Why can a popular product or strong customer demand coexist with pressure on margins, working capital and cash flow?
How can social-media demand, product differentiation and customer feedback inform decisions—and what can visibility alone not tell us?
Which repetitive tasks deserve redesign? How can managers balance automation with human review and practical constraints?
FROM EXPERIENCE TO A PRODUCT
One recurring challenge was gathering and organising invoices and other paperwork ahead of VAT-quarter review. The work was fragmented and time-consuming, but many steps followed a repeatable pattern.
That operational problem later informed the development of VATSorted, a software product for collecting, sorting and preparing UK VAT records for accountant review.
This connection is important to SMITH: it demonstrates a progression from noticing process friction in a real business to building a practical solution, rather than simply recommending one.
